Whole grains for the win

Whole grains reduce our incidence of stroke, heart attack, diabetes, and lower cholesterol. But what are whole grains?

All grains start off life as whole grains. In their natural state growing in the field, whole grains are the entire seed of a plant. This seed has three edible parts – the bran, the germ, and the endosperm.

The bran is the outer skin and contains important antioxidants, B vitamins, and fiber. The germ is the embryo which has the potential to sprout into a new plant. It contains many B vitamins, some protein, minerals, and healthy fats. And the endosperm is the germ's food supply. It contains starchy carbohydrates, proteins, and small amounts of vitamins and minerals.

Did you know that we grow whole grains right here in Tehachapi? The Tehachapi Heritage Grain Project is producing some of California's best grain. Chefs from across the region covet their Sonora/Red Fife blend wheat berries.

Cook wheat berries like you would rice or beans. Use 3 parts water to 1 part wheat berry and cook until tender. You will have some left over water to drain.

Whole grains provide a lovely chewy texture and a nutty flavor. Enjoy wheat berries ground into flour, hot as a breakfast cereal, or cold in a salad.
