A quick and easy sauce that can be used as-is or quickly converted to a salad dressing. It is also 100% "guilt free" as it contains no oil and no salt.
I use this sauce in enchiladas where the cashews create both a creaminess and a cheese-like quality when heated. The sauce is also great as a vegetable dip or in fresh spring rolls, or add a little bit of rice wine vinegar and you have the perfect salad dressing.

Cilantro Pepita Sauce
Ingredients:
*1 cup cashews • 1 cup water • *1/3 cup pepitas
• 1 bunch cilantro (stems and all)
Directions:
Put all ingredients in a high speed blender and blend on high. Use right away or chill until needed.
Lasts about 1-week in the refrigerator.
Suggestions:
For a salad dressing I mix together one part sauce and one part seasoned rice wine vinegar.
Adjust vinegar to taste.
